Date of Origin: 4th Century Famous for: Red and Green Curry

Thailand is the only Southeast Asian country which was never colonized by Western empires; therefore Thai people have created their own cuisine. One dish that they are very proud of is their curry, which was introduced to Thailand during the 4th century by Indian traders and Buddhist missionaries Later on in the 16th century the Portuguese introduced chilli peppers, which are widely used in their cuisine. Thai people have incorporated these and other ingredients to create authentic dishes which are known all around the world. Thai curry presents us with a beautiful colour scheme, using red, yellow and green.

Bangkok is the place where street food magic happens. A culinary journey on the streets of the city can bring limitless options night and day. From the simple food of the street vendors and traditional food markets to the dinner cruises and fancy dining with 3 star Michelin restaurants.

When we try any Thai curry, our taste buds experience a mixture of sweet to sour to spicy and savoury. Coconut milk is used in their curries to give a creamier and sweeter taste.

In Thailand the curry varies with the area. In the Northern areas the curry is drier and in the Southern areas you can find more liquid variations. Shrimp and fish are also used along with lemongrass or lime. Curries are eaten with jasmine rice, noodles and sticky rice which is used especially in northern Thailand.

The typical ingredients used in Thai curry are: chillies (red or green), shrimp paste, onions, garlic, galangal, lemongrass and coriander. These ingredients are traditionally ground together to create a thick paste which is then fried in a wok .The high temperature of the wok develops a unique taste from the combination of the ingredients.

For example the green curry, Kaeng Khiao Wan, is made with young chillies and is a little spicier than other curries.

Red curry, Phaneang, is made with red chillies, which are not as spicy as green chillies. Yellow curry, infused with turmeric and other spices, is very popular in Southern Thailand and is typically served with chicken or shrimp.

Massaman curry is a yellow curry made using peanut butter ,coconut milk and turmeric. The addition of cinnamon and clover makes it very fragrant. This dish is a must try if you are in Thailand.
